Bread flour

If you can't find yeast, there are two workable alternatives.


The first, low-rent, option involves bicarbonate of soda and some sort of acid (lemon juice is best, but if vinegar is all you've got, it'll do the job).


The second option is to cultivate a sourdough starter. It'll take a few days but, once you've done it, you'll be able to give it a name, call yourself an artisan and drone on about it for a decade.

If anyone is still looking for bread flour - Ayres Bakery in Nunhead is selling pre-bagged strong white and wholemeal flour. Which is a really nice thing to do when you think about it (effectively cutting across their business model, but recognising they have lots of it!).
