uncleglen
Coeliac disease is real and very debilitating. The small intestine becomes damaged andinefficient at absorbng essential vitamins if gluten is eaten Link to comment https://www.eastdulwichforum.co.uk/topic/27057-for-coeliacs/#findComment-596785 Share on other sites

Gidget
But doesn't the proximity to non gluten free pizzas pose a potential problem? Link to comment https://www.eastdulwichforum.co.uk/topic/27057-for-coeliacs/#findComment-596939 Share on other sites
uncleglen
Yes Gidget. The cook would need to be very careful to keep the flours used entirely separate or it's a waste of time. Gidget
Maybe the dough comes in pre-mixed so the flour doesn't go flying about. I hope so. I think gluten free pizza is a great idea. David Mc
All their dough comes premixed and they use cornmeal when rolling them out. I watched them and they used separate cutters for the GF bases and put them on a different baking tray lined with fresh greaseproof paper.
