It's spelt beigel on Brick Lane because that's the Germanic spelling of the cockney pronunciation of bagel ("bye gal"). Bagels are same thing as beigels, the only difference is the east London vowel.

No not down for maintenance. I can't see problems on my end. Is the problem still happening? Are you able to provide a photo or screenshot if so?
Yiddish is written in Hebrew script, traditionally, so any attempt to use 'Roman' script will be transliteration, as noted. Hebrew script does not have vowels as such, so any vowels used will try to copy the Yiddish sound of the word. Bagel and Beigel are both correct transliterations of the Yiddish word.
