Being the family cook I'm always on the look out for a new supper or lunchtime treat.


I can't do with buying fried chicken from a take-away but the taste is one I do hanker for, at times


Yesterday we at W**Fkitchen came up with this easy "healthy baked" & great fun version


A.


1 x Pack of Chicken drumsticks & thighs = 7/8 pieces


Handful of flour in a med sized bowl


Salt, white pepper, cayenne & cumin, paprika


Baking sheet/ grease proof paper


Pre-heat oven 180c/350f/gas mk 4


B.


Trim the skin/fat off the chicken.


Then split the drum part to the bone top to bottom, making a bone in butterfly


Add a *generous amount of the seasonings to the flour , plus the salt & mix ( *this only lightly coats the meat )


Now roll & dust the Chicken in the flour/seasoning mix. Tap off the loose & set aside


C.


In a hot frying pan add a little oil & fry off the pieces until nicely brown. Drain on kitchen roll & set aside


Take a flat tray or shallow roasting pan, line with scrunched up then smoothed out grease proof paper ( it catches the fat )


Put into the oven for 30-35 minutes ( check for tenderness )


E.


They should now look all golden & HomeTuckyTM like.


Serve with baked potato's / homemade chips & coleslaw salad



* For added "effect" use fresh grease proof paper to line the serving bowl, pinch over some fresh thymne



Ohh, and enjoy ...!

    • Hi, I saw your post and just wanted to say that the incident you’re referring to did happen in the late 1980s at Dawson’s Heights. The person involved was named Carl Salawa, and he had just turned 18 years old at the time. Like you, I haven’t been able to find any news articles or official reports about it, If anyone remembers anything more about that time or incident, I’d really appreciate hearing about it. Thanks for sharing what you were told—it means a lot to know others remember.
