candj
Mark Bittman's banana bread is made about once a week in my house when I have saved up enough rotting black bananas. It's the dessicated coconut that does it for me, and I substitute pecans for the walnuts (because I don't like walnuts).Enjoy! Knomester
This is my recipe Fuschia:http://thegingergourmand.blogspot.com/2010/01/banana-walnut-cake.htmlYou can leave the walnuts out or substitute for pecans or even chocolate chunks (dark works best) if you like. It's a really moist loaf cake. Link to comment https://www.eastdulwichforum.co.uk/topic/15420-banana-bread/#findComment-403665 Share on other sites

Fuschia
Now, I just need a similar recipe with apple or pineapple (son no 1 doesn't like bananas and will be miffed if we make a cake he can't eat!) candj
I think all purpose flour is plain but I've been known to use whatever I have on hand and have never noticed a difference. buggie
Fuschia, should get him to try a bit (maybe be sneaky and not tell him the ingredients) I don't like bananas, but bought a banana and date cake before christmas and found it yummy - the banana added moisture rather than flavour! LoopyMum
Our eldest detests bananas with a passion, where as the youngest two are happy to eat a whole bag in one sitting. Funny. Half apple and half banana with a sprinkle of cinnamon should do the trick - he won't notice the difference ! candj
Fuschia, you definitely can improvise with the banana bread. In your case for your son, I would use dried apples or any other dried fruit. I've added 1/2 cup of dried blueberries, sultanas or whatever other dried fruit and it works perfectly. And it really isn't that much banana flavour, but more moisture.
