Dopamine1979..I agree with fishbiscuits, a quick flash should be enough.


Also, maybe a good marinade for as long as you can spare? But make sure you only add the marinade to

the dish towards the end or you will end up with stewed meat and that probably toughens it up more.


Another way it is done in some Chinese restaurants is to cook the meat first then scoop it out whilst the veg are cooking then add the meat back with the final seasonings.
