Do you think we should open at say 7-730 a am weekdays to serve tea and coffee to commuters on their way to work?

I think you'd need to advertise it around that time in advance for a couple of weeks whilst being open and see how it goes.

why don't you do snacks like home made soup with nice bread, or simple stuff like bangers and mash.

I think you should open for two weeks at that time. Advertise you are doing so. Have some special offers. Have a loyalty card to catch the early uptake and keep it going. Maybe offer free tasters of small bits of breakfast foods to the bus stop lot near your shop. Then review the numbers and the figures after your experieminet to see if it's financially viable.
