I've trawled the internet but really want a recommended one as it's for my mother's 70th and I'm now panicking.

Only needs to be dairy fat free (ie eggs are fine, gluten is fine etc) just needs to be without actual butter, buttermilk etc. A teeny tiny bit would be fine (like cocoa powder can have traces and that's ok) just not lumps of butter etc


I really want to use cocoa too ... rather than dairy free chocolate.


Help please!!! Am in a total panic that I volunteered to bake her cake now :-(

300g self raising flour

300g caster sugar

4 eggs

250ml vegetable/sunflower oil

50g Cocoa

250ml whole milk or milk substitute- I use Koko milk if I'm making it dairy free

1 1/4 tsp bicarbonate of soda

1tsp vanilla

Pinch of salt


Oil and line two 9 inch round cake tins.

Oven 175 Celsius.

Beat sugar and oil together for a minute or so.

Sieve flour, cocoa and bicarb together in separate bowl.

Add eggs to oil and sugar mixture, beat in, add vanilla.

Mix in milk.

Fold in flour mixture in three lots.

Pour (it's very runny) into tins, bake 30 mins, sometimes it's a bit unpredictable- or that might be my oven- so skewer test after about 25 min.

Cool in tins at least ten minutes before turning out.

I also used to love the Vegetarian cafe on Neal Street in the basement (Neal Street Cafe?) and there was an inczredible inexpensive authentic Japanese resturant I use to go to with my Japanese friends (who introduced me to it) tucked away behind Long Acre where that brown brick modern building ('modern' I think it went up in the 90's!) now stands that fronts Long Acre and Neal Street..I think it was called Asakasa or something?
