I've doubled the basic 4x4 sponge recipe to use an 8in/20cm tin instead of 7in, plus I'm only using one tin (because that's all I've got) and planning to split the sponge later.


Does anyone know how much longer you need to allow in the oven (5-10 mins?) and if you need to lower the temperature? Having googled I'm none the wiser but I bet someone here will know.


Thanks in advance. Life would be so much easier if I could follow a recipe or any other set of instructions without having to change it.

Can one just not beat some air into the second batch? I've never noticed a difference between the two - maybe both my halves were flat!

And a fat lip (see above).


It took an extra 20 mins in the end. Practice version looking plausible so as I have to transport it tomorrow I'm going to freeze this one, add the filling in the morning and let the defrosting process keep it cool for me.

Actually glad you didn't listen to me, curious I looked it up and yes, as WoD says, sponge batter relies on the foaminess of the eggs which quickly decays. Thing is I use various things to make an egg replacer so the batter relies more on being heavily whisked just before being poured, so it can stand to be stood.

How did it go RPC - if you havnt achieved it yet, using just one tin and all the mixture, put tin foil over the top, if you have to leave it in oven for longer, so as nit to burn the top. And take tin foil off for the last 10 mins.

Hiya ..i am doing a afternoon tea at home soon.proceeds going to grenfell.my baking skills are variable ,think I will be ok with the scones and lemon drizzle loaf..although my last one came out flat but tasty ,think I will change from 85g to 125g ingredients,I have a 9inch cake tins, was thinking to do a chocolate cake or something with strawberries.. I want to put a nice spread on for my friends within my baking skills and a budget..

Any advice...?

Think I need to adapt a recipe for 9inch tins.

How about a Victoria sponge filled with whipped cream (add a teaspoon of icing sugar and a couple of drops of vanilla essence if you have it) and sliced strawberries? Blueberries are also good.


ETA - or start as above but do in muffin or fairy cake cases with filling piled on top.

    • Unless we don't fly I don't think we can be too critical of the authorities.  
    • In 2016 London City Airport began using concentrated flight paths. When there's a predominantly westerly wind, incoming aircraft approach from East London (north of the River). When there's a predominantly Easterly wind, incoming aircraft approach the airport from the West: circling through Forest Hill, Dulwich, Vauxhall, Tower Hamlets, Docklands. This latter flight path affects many of us in South East London. https://www.london.gov.uk/who-we-are/what-london-assembly-does/questions-mayor/find-an-answer/london-city-airport-concentrated-flight-paths The planes going into City are often below 2,000 ft, so very noisy. Sometimes we have incoming Heathrow at the same time, flying higher. The early flights that I hear e.g. 04:30 are incoming to Heathrow. They are scheduled to land at 05:30 but are 'early'. Apparently the government allows a percentage of flights to arrive early and late (but these are now established as regular occurrences, informally part of the schedule). IMHO Londoners are getting very poor political representation on this issue. Incredible that if you want to complain about aircraft noise, you're supposed to contact the airport concerned! Preposterous and designed solely in favour of aviation expansion.
    • Yet another recommendation for Jafar. Such a nice guy, really reliable and fair. He fixed a problem with our boiler and then incredibly kindly made two more visits to replace a different part at no extra cost. 
    • I didn't have any problems with plane noise until city airport started flying planes to and from about 5-8 minutes apart from 5.30 am or  6 am,  and even with ear plugs and double glazing I am woken at about 6 well before I usually would wake  up. I have lived here since 1986 and it is relatively recently that the planes have been flying far too low over East dulwich. I very much doubt that they are headinbg to Heathrow or from Heathrow. As the crow flies we are much , MUCH closer to City Airport than Heathrow or Gatwick. I even saw one flying so low you could see all the windows, when I was in Peckham Rye Park.
