Ladygooner
Am about to attempt my first bbq of the Summer. Does anyone have any easy recipes - especially want to try cooking Jerk Chicken? Salsaboy
Just don't jerk it about too much otherwise you could end up giving something nasty to your guests. Link to comment https://www.eastdulwichforum.co.uk/topic/18801-bbqs/#findComment-460712 Share on other sites

Jeremy
Chicken satay is lovely on a barbecue... marinade chunks of chicken thigh (not breast) with soy sauce, honey (or peanut butter), garlic, chilli. Make a dip from chopped peanuts, oil, lime juice, honey, soy sauce.Or "tandoori" lamb chops - marinade them in yoghurt, garam masala, chilli, garlic, ginger and lemon juice. david_carnell
Lady Gooner - if you want jerk chicken then follow the recipe of Peckham's own Food Stories. All her recipes have been excellent when I've tried them. Also this one and this one. Otta
I love jerk chicken, and have made it many times. However, it is a lot of messing about, and you can get some nice jars of jerk sauce. I know that would make certain people tut in disgust, but sometimes you need to weigh up time and effort, against the need to know it's all done from scratch.Very simple idea is to squeeze a load of lime juice on some lamb steaks, and cook a couple of hours later. Yum!!! Link to comment https://www.eastdulwichforum.co.uk/topic/18801-bbqs/#findComment-460924 Share on other sites
awilliams123
RIBS....real easy and truely the ultimate bbq feast item...check out recipe attached....I use half the amount of salt it calls for though, too salty otherwise. Your bbq guests will forever be at your mercy!! Link to comment https://www.eastdulwichforum.co.uk/topic/18801-bbqs/#findComment-460949 Share on other sites
Annette Curtain
IF you can buy or borrow the Dean & Deluca cook book, then do. It has some of the most authentic sauces in it.NETTE(tu) Link to comment https://www.eastdulwichforum.co.uk/topic/18801-bbqs/#findComment-461487 Share on other sites
Senor Chevalier
I'd also vote Butterfly lamb leg. The chaps at WIlliam Rose will do it for you. I normally chuck chopped lemons, herbs, garlic and chilli straight into the bag with it and a load of olive oil. Leave for a couple of hours and then whack on BBQ, lid on. Usually done in an hour though not two, but I like it pink. Link to comment https://www.eastdulwichforum.co.uk/topic/18801-bbqs/#findComment-461491 Share on other sites

Huguenot
Slightly restructred question, what is an authentic sauce, and why? What's the origin of BBQ sauces? Is there a momma who owns them?
