Middle-bacon. The long forgotten hybrid of streaky and back. The best of both. You just need a big pan to cook it in.

The Ginger Pig in Borough Market do fine back bacon, thick and meaty. Fantastic in a white roll with Brown sauce, Branston by personal preference.

I have learned to love the North American approach of mixing crispy streaky with pancakes and maple syrup. You can get back bacon in those parts.

In the USA it is known as "Canadian bacon". Go figure ..

I had a bacon sandwich the other day (at Brockley market) with so much bacon I had to remove some
