Make a breadcrumb mix using:


60% white breadcrumbs

40% parmesean cheese

2 tsp of cayenne pepper


Flour, egg and then dip strips of the fish into the mix.


Deep fry for 2-3 minutes according to size of fish pieces or until the breadcrumbs are golden brown.


Serve with buttered new pots and a side salad and some sort of sauce of your choice - simple mayo, tartre or something more pokey with mustard and gherkins/capers perhaps.


And a chilled glass of Sancerre.
