david_carnell Posted July 17, 2008 Share Posted July 17, 2008 Make a breadcrumb mix using:60% white breadcrumbs40% parmesean cheese2 tsp of cayenne pepperFlour, egg and then dip strips of the fish into the mix.Deep fry for 2-3 minutes according to size of fish pieces or until the breadcrumbs are golden brown.Serve with buttered new pots and a side salad and some sort of sauce of your choice - simple mayo, tartre or something more pokey with mustard and gherkins/capers perhaps.And a chilled glass of Sancerre.
