Abnormal obsessions regarding starters, levans and poolish are to be wholehartedly encouraged and flour dust is not be sniffed at either. Horsebox, There is a fantastic book called Artisan Baking across America that goes from coast to coast looking at all the top class artisan bakers in the USA. A worthwhile read if you have anorak tendencies about sour doughs *takes his anorak off as its quite mild at the mo*, also Elizabeth David English Breads and yeast raised goods is pretty much the "Escoffier Ma Cuisine" of the bread world. Chrisz, Wholemeal bloomers never seem to work as they always look flat unless you bake them so much that they look burnt. Subs though are a good idea, i will see what we can do. Vincent Ayre

A note from the owners of Ayres the Bakers. I refute all suggestions of mass murder. I know for a fact that neither I nor my ancestors have killed any of our customers by selling them fabulous buns and cakes because i have often asked them whether they are dead and they have catagorically said no. Dulwichmum cannot know much about our shop as I do not believe she has ever paid less than ?5.00 for a loaf of bread so would have no idea what a proper bakers is. For the sausage rolls I offer no defence. So there!! ps: DM I would have added a link to your UberBlog but dont know how.

The shops were not informed of the market until the last minute. If they had asked me i would have been very happy to put a stall on the green and compete with the baker there. That said I think any effort to promote Nunhead and bring more people in is allways welcome. Vincent Ayre Ayres the bakers.
