Mix yoghurt with chilli sauce, grated lime zest, lime juice, allspice, salt & pepper, chopped onion, garlic, ginger, coriander, mustard, sugar and oil.


Add chicken fillets and marinate for at least an hour.


Bake chicken in preheated oven for 50 mins or so. Turn at least once.


Finally, brown them under a preheated grill for about 2 mins.


Can't guarantee its authenticity tho, I copied it from a caribbean cookbook that happened to be within arms reach as I read your post :)

Here you go:


To make the jerk seasoning


1 desertspoon allspice

1 desertspoon chilli powder

1 desertspoon paprika

2 tsp cinnamon

1 desertspoon salt

1 scotch bonnet pepper

half red pepper chopped

half green pepper chopped

1 bay leaf

1 medium onion chopped

6 cloves of garlic

6fl.oz vegetable oil


Mix all the ingredients together except the veg oil. Place in a blender to get a rough chop until they are all mised and then add the oil a bit at a time. That is jerk seasoning.


To make the chicken


Chicken

The jerk seasoning as above

57 ml clear honey

50g brown sugar


Score, stuff and roll the chicken in the jerk seasoning. place in a roasting tin and pour over the honey and sprinkle with the brown sugar and leave to marinade for at least an hour (overnight is best). Cook according to the cooking time of your chicken.

That's very similar to the yoghurt-based marinade used to make Tandoori Chicken: yoghurt, medium or hot curry powder, salt, black pepper, garlic, ginger and, optionally, lemon juice, mustard, red colouring. No sugar or honey, though.

Good spot Sean. As you say, the Horniman Gardens did have a special feel, but the event seems to be suffering from its own success.


An early arrival is to be recommended as the Cook Off gets very busy later on in the afternoon.

    • Please be aware that there is a huge sheet of ice approx 12ft x 6ft on the road at the top end of Avondale Rise on the left hand side approaching Ivanhoe Road.  The council was told earlier this morning, but advised that, due to a reduced service, it is unlikely that grit /salt will be spread before Monday!  Several (thankfully minor) accidents have happened since this morning.  A resident has thoughtfully erected a temporary sign to advise traffic of the hazard, but bearing in mind that temperatures are due to fall to -4 over the weekend and this is on a bus route, please be very careful if driving on this road.
    • Paul was great for us - came round at an ungodly hour of the day at short notice to fix a problem. Very nice bloke too
