BigPhil Posted March 29, 2009 Share Posted March 29, 2009 This is the recipe we first used for mussel frittersMussel fritters300g cooked mussel meat, not too finely chopped1 onion, finely choppeda large handful of dill, chopped2 eggs? cup milk1 teaspoon oil? teaspoon salt125g flourSift the flour into a bowl and make a well in the centre. Crack in one egg. Separate the other egg and reserve the white in a bowl. Add the yolk to the flour, along with the salt and whisk in the oil and milk, gradually combining all the ingredients.Set the batter aside until required.Chop the mussels and place in a bowl (1) with the onion and a generous quantity of chopped dill.When ready to cook, whip the eggwhite until stiff and fold into the batter. Then add the batter to the mussel mixture.Heat some oil in a frypan or use a flat griddle. Turn the heat back a little and spoon out the fritter mix (2). Allow each fritter to cook to a golden brown on the underside then turn and complete the cooking (3). bon3yard Posted March 29, 2009 Share Posted March 29, 2009 I do make an effort to shop locally but if its a toss up between the shoddily run but reasonably well stocked co-op(forest hill road)or the independent shop just up from the Herne Tavern which although staffed by well mannered and charming people never seems to have much of anything on its shelves then I'm afraid the co-op wins everytime.
