I've been using this tool for a long time to convert pdf's into editable excel documents. But you can convert into word too (and others). It's completely free and I've no reason to think it's not safe. You could give it a go if your so inclined. I tried a conversion into word to see what the result was like. On my work PC I use this Free Online PDF Editor | Edit PDF Files Effortlessly with Foxit or a version of it. There's a free trial. My requirements are very simple, just changing details on invoices occasionally. Works for me.

They changed our set up a couple of months ago so it's now via the Hub. We hardly ever use it but yesterday noticed it wasn't working. Anyone else had problems with the new set up?
