Does anyone have a good recipe/method for a proper pie, i.e. with pastry base.


I tried a while back to find the correct method of making a pie with a base online... I have never been so frustated and so close to throwing my laptop out of the window. It always came back with a "lid" receipe, which is NOT a pie in my book.

VBC - what you are making is a double-crust pie (or a pot-pie). If using shortcrust pastry, you blind bake. i.e. cook the pastry base first (pastry overlapping edge of the tin) for a few minutes. Add filling. Put on lid, sealing with beaten egg. Crimp the edge and trim. Glaze lid. Put back in oven.


If using puff, you can't really blind bake, so you just have to make sure the filling is cold when you put it in the oven.

why do they give it a fancy name when it's just a good old fashion pie! Grrrrr. Pie denotes a bottom and top filled with filling... a "lid" is not a proper pie, so why the heck does this come up as the norm in recipe searches.


Thanks for the tips - I'm not having a go at you personally. I am just having a rant about pies

    • Anyone can deliver for Evri - my daughter having just passed her driving test tried Evri to make some money - they basically give you a route and as many parcels as they think you can cope with - you make money for each one you deliver, so you can imagine - speed is the priority. Why would they wait for you to answer the door when they can just throw it and take a photo? If you have a choice, choose a different courier service or shop elsewhere where they do.  
    • Boil - it’s the customer’s fault, not the delivery person’s. 
    • A bit of a long shot but I'm on the lookout for a portable pop-up counter or podium.   The kind you often see on a high street, used by charities or utility companies to advertise their wares.   I've included a photo to give you the idea. I'm a peckham-based artist and am looking for one for a free (and non-profit) community art project.  It can be in any workable condition and can already have signage on it as we will remove and redecorate ourselves.    Thanks in advance, Linzie
    • No I absolutely did not - that much is clear. Have you read the latest stories about Unite, Len and the hotel in Birmingham? The UK electorate were smart enough to reject a far-left party in 2019, let's hope they are smart enough to reject a far-right party at the next election too. If not we are all doomed.
