KatsuQueen
I had a pub lunch today and it came with some chopped courgettes which were delicious. Crunchy and yummy. How come every time I try to cook courgettes they go all soggy and the skin is just bitter and horrible. What am I doing wrong? bon3yard
Pan Full of sizzling oil, a little garlic, some fennel and mustard seeds, salt & pepper, a quick 2 minute stir fry a squeeze of lemon juice and Fannys yer aunt. Just make sure you dont overcrowd the pan or they will stew. Link to comment https://www.eastdulwichforum.co.uk/topic/8642-courgettes/#findComment-263717 Share on other sites
Ladymuck
Or, as a side dish:Slice courgettes thinly.Make some breadcrumbs.Add seasoning to your taste (I like a bit of crushed garlic, salt, and pepper).Dip courgettes in beaten egg.Coat courgettes in breadcrumb mix.Deep or shallow fry till brown.Simple but yummy. This was only recently shown to me by an 89 year old lady from Serbia. She does the same with aubergines too! She's amazing. Peckhamgatecrasher
Can't beat courgettes sliced thickly, put on griddle pan with fresh rosemary, doused afterwards with olive oil. KatsuQueen
Thanks for the tips. (dumpling squash - sounds so cute!) But how come when I buy courgettes, the skin is always really "prickly" and bitter? I always end up peeling them.
