Whether you do or don't here's another one I learned: For cheese sauce, cover grated cheese in a heaped tablespoon of cornflour and mix it up so the cheese is well covered. Then put the lot into the warm water or milk, and stir till it thickens. It tastes better and won't go lumpy. Now you can do the cauliflour cheese!
